We have people ask at our market stall for sauce variety that they only got on holidays in the Caribbean eg Aruba/Antigua. This Yellow has the signature Caribbean hot Pepper and the mustard mouth feel.

We grow and bottle the yellow Scotch bonnet peppers for this yellow magic elixir only one time a year, and this is that one time October 2021. It has a name upgrade and in spiciness from mild to moderately-hot due to the yellow scotch bonnets impact on the mix. It is a Carib Asian fusion and near cousin to the ever popular Hattwood Sunshine Sauce with more of a Caribbean mustard twist and less fruit forward.

This is a gentle damsel though, a tasteful mouthful, not obtrusive or even intrusive but so beautiful and mouthwatering she will not be overlooked even among more overheated sauce guests. What Yellow lacks in capsicum muscle she more than makes up for in class and sensibility. She will become a companion in demand at every table. Sophisticated, witty and bright.

 A delicate sauce blend made from a variety of hand-reared juvenile peppers, all grown on our farm in the Poconos. A tender & fruity mouth melody married to a gentle asian flair. Fantastic on everything and supreme on fish!

Ingredients: Vinegar, Mild peppers, White & Yellow onions,
Hattwood Farm Habanero Peppers, Water, Garlic, Sea moss (as thickener)
Stone ground Mustard (Water Mustard Seed, Vinegar, Salt, Citric acid, turmeric),
Apricots, Ginger, Salt, Raw Sugar, Pimento, Oil, Herbs and Spices


This is (Yellow Seasonal Sauce) perhaps the most beautiful sauce fusion I ever created (and tasted). It looks beautiful, it tastes wonderful and the aroma is like a sanctified aroma.
